Stir-Fry Leek With Prawns – An Easy Recipe To Treat kidney Deficiency And Impotence.

INGREDIENTS

Checklist and Preparation
▢16 pieces of medium size prawns 
▢400g / 1 stick of leek
▢2 tablespoons extra virgin olive oil -divided
▢3 garlic cloves, minced
▢3 thin slices ginger, minced
Chinese Shao Xing cooking wine, can substitute a dry sherry or mirin (Japanese sweet rice wine) (Optional)
▢light soy sauce
▢sesame oil
▢oyster sauce
▢white pepper ground
▢water add more if the stir-fry is too dry
▢Himalayan pink salt to taste (Optional)
▢Brown Sugar to taste (Optional)

Prep A-Marinade Prawns In Advance
▢1 teaspoon light soy sauce
▢1 teaspoon sesame oil
▢3 dashes white pepper ground
1 teaspoon Chinese Shao Xing cooking wine, can substitute a dry sherry or mirin (Japanese sweet rice wine) (Optional)

Prep B-Seasoning
▢1 teaspoon light soy sauce
▢1 teaspoon oyster sauce
▢3 dashes white pepper ground
▢¼ teaspoon Himalayan pink salt to taste (Optional)
▢¼ teaspoon Brown Sugar to taste (Optional)

INSTRUCTIONS 

Preparation-1 Clean & deveined the prawns.
Clean and devein prawns, leaving the section of the shell and the tail intact. This adds significant flavor to your dish. Slit open along the center back and remove the vein. Please refer to note:


Preparation-2 Marinade The Prawns. 
Marinade the prawns to infuse it with plenty of flavor. Whisk everything together in either a large bowl or a resealable plastic bag. (Prep A-Marinade Prawns)  This shrimps marinade contains a few variety of savory ingredients that blend together to make the perfect seasoning for fresh shrimps. I recommend marinating your shrimp for at least 20 minutes and pop this in the refrigerator while you prepare other things.


Preparation-3 Cleaning and Cutting The Leeks.
Trim and discard the bottom roots and any withered leaves. Clean the leeks by washing each stalk carefully, particularly inside the crevices of the top outer leaves which trap soil. Cut the leeks at a slant angle to uniform short sections, separating the top green portion from the bottom white portion. Soak cut leeks in a bowl of cold water, swish to remove any grit and lift them out into a colander. Clean the bowl, change the water and repeat until the water remains clear. Once they are all in the colander, toss them a bit with your fingers to separate the leaves. Please refer to note:


Lets get into action:

Step No 1-Fry The Prawns.
  • Heat a non stick pan over high heat until hot.
  • Add 1 tablespoon of oil and swirl to coat the bottom of the pan.
  • Then fry the prawns on one side, turn them over with a spatula to cook on the other side, until the shrimp just starts to turn pinkish creamy in spots, less than 1 minute.
  • When the prawns are done, dish up and set them aside on a plate.

Step No 2 -Stir Fry The Leeks With Prawns.
  • Heat remaining oil in the same pan.
  • Add garlic and ginger; fry briskly until fragrant. 
  • Add bottom white portion of the leeks.
  • Stir fry continuously until softened, about 1 minutes. Add the rest of the leeks, seasonings (Prep B-Seasoning) & water. 
  • Drizzle Chinese wine along the sides of the pan. Toss and stir until the leeks just start to wilt and cook thoroughly, about 1 more minute. 
  • Return the cooked prawns back to the pan, giving everything a quick stir fry for about 1 1/2 minutes, or until just cooked through. 
  • The shrimps should now be pink. 
  • Serve immediately while still warm.

Food Tips:

Traditionally leek actually has a certain or minimal aphrodisiac effect. and is also good to support  and improve male sexual performance. On Scallion Prep.
Cut the scallion into thin rings and separate the green and white sections. The white section is used as aromatic, while the green part is for garnishing the dish. The finished dish will be sweeter and have less pungent garlicky taste.


On Chives Prep.
Wash and trim off about 1-inch of the bottom part. Cut the chives into about 3-inch sections


On Eggs Prep.
Crack 3 eggs into a bowl and season with -
¼ teaspoon salt,
3 Dashes white pepper,
 ¼ teaspoon sesame oil,
1 teaspoon Shaoxing wine.

Remarks-
The salt helps break down the structure of your eggs which will make them fluffy and tender because the salt helps breakdown proteins. The eggs become more liquid and viscous. Plus your eggs will be nice and seasoned.

Beat eggs for a minute, then set aside.
The key step of tender egg is to get it well beaten. Use a whisker or fork to beaten the egg until there is a small layer of fine bubbles.  The air inside the egg liquid can help to make them fluffy and tender. 

Let us kick start:

Step No 1-Frying The Eggs.
  • In a non-stick frying pan, preheat the wok over medium high heat until it just starts to smoke.
  • Then add 1 tablespoons of oil.
  • When oil smokes, it is ready, immediately add the eggs. 
  • Scramble the eggs, use your spatula to spread the eggs. Keep stirring with a spatula until the eggs form lumps.
  • Gently chopping and break the egg lumps into bite sized pieces, until egg is just cooked-no more liquid.
  • Remove from the heat immediately and transfer egg to a plate and set aside.
Tips:

To make perfect scrambled eggs, you have to keep stirring the beaten egg in a back and forth motion, using a spatula. This will ensure that the eggs will form into nice and chunky pieces.

Timing is important as you don’t want runny eggs or overcooked eggs. As soon as the scrambled eggs are set, turn off the heat and set side.

Step No 2- Frying The Prawns Or Shrimps.
  • Heat a non-stick frying pan over high heat until hot.
  • Add 2 tablespoon of the oil and swirl to coat the bottom of the pan.
  • When oil smokes, tip in the prawns and fry the prawns on one side, turn them over with a spatula to cook on the other side, until the shrimp just starts to turn slight pinkish creamy in spots, less than 40 seconds .  
  • When the prawns are done, dish up and set them aside on a plate.

Step No 3-Frying The Chives.
  • The same non-stick pan, heat up to medium heat with remaining oil-1 tablespoon extra virgin olive oil.
  • Add the white section of the scallion, ginger; and the garlic, sauté a few times until fragrant. 
  • Add the chives.
  • Stir fry over medium heat continuously until half withered or softened, about 30 seconds. Add the seasonings (Prep C-Seasoning)  add 2 tablespoon water.
  • Drizzle Chinese wine along the sides of the pan. Toss and stir until the chives just start to wilt and cook thoroughly, 30 more seconds. 

Step No 4-Mash Up
  • Return the cooked prawns and eggs back to the pan. Sprinkle the green section of the scallion rings on top, giving everything a quick stir fry on high heat for about 1 minutes, or until just cooked through.
  • The shrimps should now be pink. The finished dish will be sweeter and have less pungent garlicky taste.
  • Remove from heat immediately to avoid overcooking.
  • Serve the prawns-chives stir-fry with eggs immediately with a bed of steamed rice while still warm.

Tips:
  • Adjust the seasoning according to your taste. Remember to carry out a taste test before removing from the pan. 
  • Be quick handed when stir frying this dish, taking care not to overcook the chives, eggs and prawns.
  • To improve sexual health, you can eat this dish 2 or 3 times a week.
